Crisp fresh green beans and wild rice are combined together with crunchy sliced almonds and chopped garlic to give this Green Bean & Wild Rice Stir Fry a bounty of flavor!
Do you have a picky eater in your home? I’m pretty sure every home has one. In fact I was the picky eater of our family when I was little. I was pretty picky. I remember I didn’t really like condiments. Everything needed to be dry. I even used to take a napkin and wipe the catsup off my hamburger at McDonalds! Thank goodness I grew out of that stage! Now I’ll eat just about anything…with a few exceptions.
My daughter is the pickiest one in the house now, but nothing like I used to be, thankfully. She will at least eat what we’re having even if she really isn’t into it. She’s a bit of a carboholic and likes the white version of things. White rice, white bread, white pasta. Now that she is getting older and maturing, eating a more healthful diet has become more important to her so I’ve been trying some different whole grain, non-white foods.
I made some wild rice a few weeks ago in place of white and while my son and I really enjoyed it, however, it was a bit of a stretch for my daughter’s taste. I decided to try to make a stir fry with some of the flavors I know she enjoys, added some green beans and guess what?! She loved it and went in for seconds!
We enjoyed this tasty healthy side dish along with Lemon & Rosemary Roasted Chicken Thighs that I shared the recipe for earlier this week and Strawberry Spinach Salad {with Honey Poppy Seed Dressing} that I shared last week.
I always love to hear those magic words, “This is delicious Mom!” but they sound even better knowing that what they think is so delicious is also healthy!
Green Bean & Wild Rice Stir Fry
Ingredients
- 1 Cup Prepared wild rice according to package directions I used 1 cup dry wild rice
- 1 1/2 Cups Cut green beans ,blanched
- 1/2 Cup Sliced almonds
- 2 Cloves Garlic ,chopped
- 1-2 Tablespoons Olive oil
Instructions
- Heat oil in a large skillet on medium heat. Add blanched green beans and sautee for 2-3 minutes. Add almonds and garlic and sautee for 1 minute. Add wild rice and mix everything together. Continue until rice is heated through.
- **Wild rice takes about 45 minutes to make so sometimes I like to make the rice the day before and refrigerate until I'm ready to use it.

The other great thing that I love about this Green Bean & Wild Rice Stir Fry is that you don’t really need to make another vegetable or starch since they are already both incorporated into one dish here!
