Warmer weather has finally started to make an appearance here in New England. Have you fired up your grill yet? Well then you’ll need some awesome grilling recipes. Here is an amazing one that my family loves so much that I use it year round. If I can’t get out to the grill, I broil it in the oven! This Grilled Shrimp {Scampi} adds a bit of a twist on the traditional recipe. The addition of ginger and lime juice creates a fresh bright flavor that’s perfect for summer time grilling.
I plan on making batches of this mouth watering basting marinade to store in the freezer. I like to have it on hand for a quick and easy meal on those busy nights. You literally have it on and off the grill in about 7 minutes!
Grilled Shrimp {Scampi}
Ingredients
- 1/4 Cup Soy sauce
- 1/4 Cup Sesame oil
- 2 Limes juiced
- 2 teaspoons Honey
- 1 2 inch piece fresh ginger finely grated,
- 4 Cloves Garlic chopped
- 1/2 Cup Canola oil
- 1 Stick Unsalted butter softened
- 24 Extra colossal or jumbo shrimp
Instructions
Make the basting marinade:
- Whisk all of the ingredients except for the butter and shrimp in a medium bowl.
- Pour into a blender or food processor and blend for one minute.
- Add butter and pulse until thoroughly combined.
- You can store in refrigerator or freezer in a covered container or ziplock bag or use right away.
Cooking instructions:
- Season shrimp with salt and pepper and brush with mixture.
- Place on pre-heated grill and cook for 2-3 minutes per side or until just cooked through.
- (Cook time varies depending on size of shrimp used.)
- To add more flavor, baste with mixture while grilling.
- (Keep basting mixture separate from the left over mixture that you store so as not to contaminate.)
Nutrition
Add your Grilled Shrimp {Scampi} marinade to flavor your chicken or salmon as well. It’s a tasty seasoning on rice and pasta too. Happy grilling!
