We’ve been experiencing some cool, raw weather here in New England the past several days…or as I like to call it… Soup Weather. This Italian Tortellini Soup was the perfect medicine to help warm us up!
I love soups that feed like a meal like Mom’s Vegetable Beef Barley Soup. I like to make large batches so I have extra to keep in the fridge. That way we have something healthy to grab and go. With our busy schedules it’s a huge help!
I made this Italian Tortellini Soup a few times last winter and it has become a new family favorite. I decided to lighten it up a bit this time by using turkey sausage. Any time I can cut back on a few calories without sacrificing taste is a huge plus. It was just as delicious and everyone was going in for a second bowl.
The other thing I love about this recipe is I can have it ready in about 20 minutes!
Twenty minutes and you have a soup that feeds like a meal ready and on the table! Talk about a great week night meal when you just want to sit down, relax and enjoy some family time!
Rustic Italian Tortellini Soup
Ingredients
- 1 Pound sweet italian turkey sausage casings removed
- 1 ,6 ounce bag Baby spinach
- 3 Cloves Garlic ,chopped
- 2 medium Onions ,diced
- 1 ,16 ounce bag Frozen cheese tortellini
- 2 ,32 ounce boxes Chicken broth
- 1 ,28 ounce can Diced tomatoes
- 2 1/2 Cup Water
- 1 1/2 teaspoons Dried basil
- 1/2 teaspoon Pepper
- Pinch Crushed red pepper flakes
- Grated parmesan cheese for topping ,optional
Instructions
- In a large Dutch oven or large soup pot, cook onion and sausage until meat is cooked through. Add the garlic and cook for another minute. Pour in broth, water, and diced tomatoes and bring to a boil.
- Add tortellini and cook for about 3-4 minutes. Reduce heat and add spinach, basil, pepper and red pepper flakes. Cook for another minute, just until spinach has wilted. Remove from heat and serve.
- ** If you are planning to save some of the soup in jars to eat on another day you can cook the tortellini in a seperate pot and keep them in a tupperware container. Add them to your serving of soup as you reheat it.This will prevent the tortellini from getting too soft and also from soaking up too much broth.
