July is coming to a close and our garden is overflowing with zucchini. If you have a garden you know what I’m talking about. You literally need to check for new ones every day. So what’s one to do with all those beautiful zucchini? How about {Secret Ingredient} Zucchini Bread.

{Secret Ingredient} Zucchini Bread

There were many foods that were a staple in Grammie and Grandpa”s house.  Banana Bread, Half Sour Pickles, Pineapple Upside Down Cake and Zucchini Bread.

Whenever I walked into their house I was sure to see at least one of these delicious homemade creations sitting on the counter.

To keep up the tradition I knew that this {Secret Ingredient} Zucchini Bread was the perfect use for all that zucchini coming out of the garden.

The secret ingredient that produces this super moist and flavorful bread is….pudding! I used vanilla but you could use any flavor you like. Best zucchini bread I’ve ever had!

{Secret Ingredient} Zucchini Bread

The secret ingredient that produces this super moist and flavorful bread is....pudding! I used vanilla but you could use any flavor you like. Best zucchini bread I've ever had!

Ingredients

  • 3 Large eggs
  • 1 Cup Canola oil
  • 2 teaspoon Vanilla extract
  • 1 Cup Sugar
  • 1/2 Cup Light brown sugar
  • 2 Cup Grated zucchini
  • 2 Cups All purpose flour
  • 1 teaspoon Baking soda
  • 1/4 teaspoon Baking powder
  • 1 teaspoon Salt
  • 1 teaspoon Cinnamon
  • 1 (3.4 ounce package) Instant vanilla pudding

Instructions

  • Preheat oven to 350 degrees F. Grease two loaf pans and set aside.
  • In a large bowl, beat eggs, oil, vanilla and sugar. Stir in zucchini.
  • In a medium bowl, add flour, baking soda, baking powder,salt, cinnamon, and pudding. Whisk together. Gradually mix dry ingredients into wet.
  • Divide batter evenly between both loaf pans and bake for 45 minutes to 1 hour or until a toothpick comes out clean.
