Skillet Cornbread

If you had trouble getting onto my site last week I apologize.  Apparently my hosting site was compromised and it took a very long time for them to get it back up and running.   I was planning on sharing this delicious recipe with you last Thursday but I wasn’t able to get onto my site either!   Everything is back to normal now.  Just in time to share this recipe before the Super Bowl thankfully.  YOU are definitely going to want to have a giant slice of  this Skillet Cornbread to go with your Crockpot Turkey Chili!

My son originally made this recipe a few weeks ago when he treated our family to a smorgasbord which included his Barbecue Pulled Pork and {Healthy} Cole Slaw Dressing.   It was so delicious that I knew I just had to make it to go with my Crockpot Turkey Chili .  I made my chili for the big playoff games last weekend and it was a huge hit.  I definitely will be making it again and again.  Enjoy!

Skillet Cornbread

This Skillet Cornbread is so moist, delicious and easy to make you'll never make cornbread from a box again!

Ingredients

  • 2 1/2 Cups Cornmeal
  • 1 1/2 Cups All-purpose flour
  • 3/4 Cup Sugar
  • 2 teaspoons Salt
  • 4 teaspoons Baking powder
  • 1 teaspoon Baking soda
  • 2/3 Cups Whole milk
  • 2 Cups Buttermilk
  • 4 Large Eggs ,lightly beaten
  • 2 Sticks Unsalted butter ,melted

Instructions

  • Preheat the oven to 425 degrees F and place a 9-inch cast iron skillet inside to heat while you make the batter.
  • In a large bowl, whisk the cornmeal, flour, sugar, salt, baking powder, and baking soda together. Add the milk, buttermilk, and eggs and whisk to combine. Whisk in almost all of the melted butter, reserving about 1 tablespoon for the skillet later on.
  • Remove the hot skillet from the oven. Reduce oven temperature to 375 degrees F. Coat the bottom and sides of the hot skillet with the remaining butter. Pour the batter into the skillet and place it in the center of the oven. Bake until the center is firm and a cake tester or toothpick inserted into the center comes out clean, about 30-40 minutes. Allow to cool for 10 to 15 minutes and serve.

    Looks delicious! I’ve been on the look out for a good cornbread recipe, I’ve never made one in a skillet before. I need to give this a try!

    My kids absolutely love cornbread…they consider it a treat! I’d love to try to make this for them…I’d be the hero of the day!
