Celebrate the coming of Spring with this Strawberry Spinach Salad {with Honey Poppy Seed Dressing}! Healthy and Delicious!
We certainly had one long, cold, snowy winter here in the Northeast. In fact there are still patches of snow in a few places that are taking there sweet time melting!
I can’t begin to tell you how happy I am that warmer weather has finally arrived. There is one little problem I’m having with that though. My warm weather clothes seem to have shrunk over the winter. I refuse to go out and buy clothes in a larger size so that means I need to get back on track with my eating habits.
Both of my children are really becoming more health conscious now that they’re older so it’s nice to have them on board with me. They both still seem to think that eating healthy doesn’t taste good though. I am accepting their challenge and I’m determined to prove them wrong!
When they got a taste of what was on the dinner menu tonight they began to realize that they might be mistaken.
The meal started with this tasty Strawberry Spinach Salad. I added some caramelized onions and made a (dairy-free) creamy Honey Poppy Seed Dressing to drizzle on top. The main course was Lemon & Rosemary Roasted Chicken Thighs and finally I served a Green Bean & Wild Rice Stir Fry on the side.
It was all so delicious that I’ll be sharing each recipe with you starting, of course with this Strawberry Spinach Salad!
Strawberry Spinach Salad {with Honey Poppy Seed Dressing}
Ingredients
For the salad
- 10 Ounces Baby spinach
- 1 Cup Sliced strawberries
- 1/4 of a red onion ,sliced and caramelized
For the Poppy Seed Dressing
- 1/2 Cup Mayonnaise ,I used a canola mayo
- 1/4 Cup Almond milk ,I used some with a touch of honey added
- 2 Tablespoons Sesame seeds
- 1 Tablespoon Poppy seeds
- 2 Tablespoons Honey
Instructions
- Place washed spinach in a serving bowl. Top with sliced strawberries and caramelized onions.
For the Poppy Seed Dressing
- Whisk all of the ingredients together in a small bowl. Put in a dressing jar or bowl to serve.
