Ingredients
2SticksUnsalted butter,softened
1CupPacked light brown sugar
2Large eggs
2CupsRolled Oats
2CupsAll-purpose flour
1/2teaspoonSalt
1teaspoonBaking soda
1teaspoonVanilla extract
2teaspoonOrange zest
1CupDried cranberries
1CupWhite chocolate chips
1CupWalnuts,chopped (optional)
Instructions
Preheat oven to 375 Degrees F.
In a small bowl, whisk together oatmeal, flour, salt and baking soda. Set aside.
In a large bowl mix together butter and brown sugar until light and fluffy. Add eggs one at a time, mixing well between each addition. Add vanilla and orange zest and mix to incorporate.
Gradually add dry ingredients and mix well. Stir in cranberries, walnuts and white chocolate chips.
Drop by teaspoonfuls onto an un-greased cookie sheet. Bake for 10-12 minutes. Remove from oven and cool for 2 minutes before removing to a cooling rack. I usually work with two cookie sheets. When one comes out to cool, one goes in to bake.
