A delightful little cookie loaded with all the great rustic flavors of the season. These Cranberry Oatmeal Cookies {with Walnuts & White Chocolate Chips} are the perfect cookie to serve during the holiday season. I love to have a giant plate of these available for when family and friends stop by!

Cranberry Oatmeal Cookies {with Walnuts & White Chocolate Chips}

One of my least favorite things is raisins in my food. Give me a good old fashion oatmeal raisin cookie and I will probably eat it but you may find a small pile of raisins on the side of my plate. 🙂 But put craisins in it and I’m all in! What’s up with that?

They’re both so similar but for some reason they are so different to me. I guess it’s that slight tart flavor of the craisin that does it for me. Which do you prefer? Craisin or Raisin?

Cranberry Oatmeal Cookies {with Walnuts & White Chocolate Chips}

I made this giant plate of Cranberry Oatmeal Cookies {with Walnuts & White Chocolate Chips} to bring to a Halloween party. I wasn’t sure how they would go over with all the candy and other awesome desserts there but by the end of the evening the plate was wiped out!

People were fighting over who was going to get to bring the last few home in a  ziploc baggy! So I guess you could say they were a success!

Ingredients

  • 2 Sticks Unsalted butter ,softened
  • 1 Cup Packed light brown sugar
  • 2 Large eggs
  • 2 Cups Rolled Oats
  • 2 Cups All-purpose flour
  • 1/2 teaspoon Salt
  • 1 teaspoon Baking soda
  • 1 teaspoon Vanilla extract
  • 2 teaspoon Orange zest
  • 1 Cup Dried cranberries
  • 1 Cup White chocolate chips
  • 1 Cup Walnuts ,chopped (optional)

Instructions

  • Preheat oven to 375 Degrees F.
  • In a small bowl, whisk together oatmeal, flour, salt and baking soda. Set aside.
  • In a large bowl mix together butter and brown sugar until light and fluffy. Add eggs one at a time, mixing well between each addition. Add vanilla and orange zest and mix to incorporate.
  • Gradually add dry ingredients and mix well. Stir in cranberries, walnuts and white chocolate chips.
  • Drop by teaspoonfuls onto an un-greased cookie sheet. Bake for 10-12 minutes. Remove from oven and cool for 2 minutes before removing to a cooling rack. I usually work with two cookie sheets. When one comes out to cool, one goes in to bake.
  • Once cooled transfer to serving dish.
