Do you make a face when you hear the words Brussel Sprouts? I used to until I tried this recipe for Oven Roasted Brussel Sprouts {with Corn Bread} ! Now it's one of my favorite vegetables!

Ingredients
20-30Brussel sprouts,stems trimmed and outer leaves removed
1Sweet onion or red onionSliced
1,15 ounce packageCornbread from bakery,cut into bite size pieces
Salt and pepper to taste
2-3TablespoonsUnsalted butter
Instructions
Preheat oven to 375 Degrees F.
Blanch brussel sprouts. ( Boil for 1-2 minutes then drain and place in an ice bath to stop cooking)
Heat 1 Tablespoon of butter in a skillet and add onions. Once hot, cook for 2-3 minutes. Add brussel sprouts and cook for 5 minutes. Season with salt and pepper. Add remaining butter and corn bread toss everything together. Place skillet in oven for 15-20 minutes to finish cooking.
