Do you make a face when you hear the words Brussel Sprouts? I used to until I tried this recipe for Oven Roasted Brussel Sprouts {with Corn Bread} !  Now it’s one of my favorite vegetables!

Oven Roasted Brussel Sprouts {with Corn Bread}

I grew up surrounded by some pretty incredible cooks but there was one area where their cooking expertise fell a little short. The brussel sprout area. Boiling these bitter little cabbage like veggies just didn’t cut it for me.

If you asked me if I liked brussel sprouts even 1 year ago I would have made a face and turned my nose up. Then my sister shared her favorite recipe from her favorite restaurant with me and now I am happy to be a brussel sprout loving convert!

Oven Roasted Brussel Sprouts {with Corn Bread}

Ingredients

  • 20-30 Brussel sprouts ,stems trimmed and outer leaves removed
  • 1 Sweet onion or red onion Sliced
  • 1 ,15 ounce package Cornbread from bakery ,cut into bite size pieces
  • Salt and pepper to taste
  • 2-3 Tablespoons Unsalted butter

Instructions

  • Preheat oven to 375 Degrees F.
  • Blanch brussel sprouts. ( Boil for 1-2 minutes then drain and place in an ice bath to stop cooking)
  • Heat 1 Tablespoon of butter in a skillet and add onions. Once hot, cook for 2-3 minutes. Add brussel sprouts and cook for 5 minutes. Season with salt and pepper. Add remaining butter and corn bread toss everything together. Place skillet in oven for 15-20 minutes to finish cooking.

    I love brussels sprouts- this recipe is inspiring me to add brussels to my family’s traditional corn bread stuffing this week! Wonderful idea.

    I need to try this!! I hated brussels sprouts growing up, for exactly the reason you mentioned…my mom boiled them. Then I was introduced to roasting from my father in law and I was off and running. I love this recipe! We definitely need to try it here…I would never have thought to add cornbread…but that is another thing my kids love! Thanks for sharing it with us at #FoodieFridays!
