  • 1 Dozen Eggs ,hard boiled
  • 6 Tablespoons Mayonnaise
  • 4 teaspoons Dijon mustard
  • 4 teaspoons Sriracha sauce
  • 2 teaspoons Lime juice
  • salt and pepper to taste
  • chopped cilantro for garnish
  1. Slice hard boiled eggs in half and remove yolks to a medium mixing bowl. Smash yolks with a fork until no more large pieces are left. Place whites on a serving dish and set aside.
  2. Place mayonnaise, dijon mustard, sriracha and lime juice in the bowl with the yolks. Mix well. Add salt and pepper to taste and mix. I like to use my hand mixer at this point to make them smooth and creamy. Mix on high for 1-2 minutes for a creamy consistency.
  3. Fill a piping bag fitted with piping tip and fill each egg white cavity evenly with mixture.
  4. Top with a sprinkle of chopped cilantro to garnish.
  5. ** For extra spiciness add a squirt of sriracha to the top of each filled egg or sprinkle with a pinch of cayenne pepper.
