These Cinnamon Streusel Pear Bars combine a cinnamon oatmeal crust, pear and cinnamon chip filling and a cinnamon oatmeal crumb topping. Finally icing is drizzled on top to make them even more scrumptious!

Cinnamon Streusel Pear Bars

Do you ever feel like you get stuck in a rut, making the same things over and over?  I certainly feel that way sometimes.

I know what flavors and foods my family likes so I always try to please their pallet.  But there’s a whole world of different foods and flavors out there.

I have found many new family favorites by trying different things like these Cinnamon Streusel Pear Bars.

Normally I would have used apples in these lovely little bars but I had some beautiful juicy pears that were calling to me.  So I decided to change things up just a bit.

Everyone loved the combination of cinnamon and pear.  I loved how easy it was to throw these together!

Success!   Another family favorite to add to the list!

Cinnamon Streusel Pear Bars

These Cinnamon Streusel Pear Bars combine a cinnamon oatmeal crust, pear and cinnamon chip filling and a cinnamon oatmeal crumb topping. Finally icing is drizzled on top to make them even more scrumptious!

Ingredients

For the crust and crumb topping

  • 2 Cups All-purpose flour
  • 1 1/4 Cups Quick-cooking oats
  • 3/4 Cup Packed brown sugar
  • 2 teaspoons Ground cinnamon
  • 1 Cup Unsalted butter ,cold

For the pear filling

  • 2 Large Eggs
  • 1 Cup Granulated sugar
  • 2 Tablespoons All-purpose flour
  • 1/4 teaspoon Baking powder
  • 1/4 teaspoon Salt
  • 2 Cups Pears ,peeled, cored and chopped
  • 3/4 Cup Cinnamon flavored chips ,optional

For the icing

  • 1 Cup Confectioner sugar
  • 1 Tablespoon Milk

Instructions

  • Preheat oven to 350 Degrees F. Lightly grease a 13x9x2 inch baking pan. Set aside.

For the crust and crumb topping

  • In a large mixing bowl stir together the flour, oats, brown sugar and cinnamon. Using a pastry blender cut the butter into the mixture to form corse crumbs.
  • Remove 1 1/2 Cups of the mixture and set aside to use later as topping.
  • Press remaining oat mixture onto the bottom of your prepared pan. Bake for 15 minutes.

For the pear filling

  • In medium bowl mix the eggs and sugar with a whisk until smooth. Whisk in the 2 tablespoons of flour, baking powder and salt. Stir in the pears and cinnamon chips if using.
  • Gently spread fruit mixture over warm crust. Sprinkle the reserved oat mixture on top.
  • Bake for 30-35 minutes.
  • Remove from oven and cool. Cut into squares and drizzle with icing.

For the icing

  • In a small bowl mix sugar and milk until smooth. You can add more milk if needed a teaspoon at a time until icing is a good consistency for drizzling.
